Imagine, if you will, having to stay at college during Thanksgiving with your friends. Far away from home, but among friends, you make up your own traditions and learn about different ways other people celebrate their special day. One of my favorite Thanksgiving celebrations was during this time, when one of my best friends introduced me to the wonder that is home made pumpkin bread. And with a recipe this easy, there is absolutely no reason to buy the boxed version.
With no further ado, here is a fantastic pumpkin bread recipe that will make you the envy of everyone around:
4 c. flour
3 c. sugar
2 tsp baking soda
1 1/2 tsp salt
1 T. Cinnamon
1 c. oil
1 15oz. can of pumpkin (buy solid pack pumpkin NOT pie mix)
2/3 c. cold water
4 eggs
Mix together all dry ingredients into large bowl. Add oil, pumpkin and cold
water. Blend well. Add eggs (slightly beaten) one at a time, beating well
after each egg is added.
Pour batter into 3 well greased loaf pans and bake for 50-60 minutes at 350 degrees. The classic toothpick test works, but be aware that a little bit sticking to the toothpick can be a good thing as the bread still has a couple more minutes of baking to do once it's taken out of the oven.
